Even or Level Measuring Cup or Spoon

Measure the amount precisely. Discard the entire ingredient that rises above the rim of the measuring cup or spoon. The back of a straight knife works well for this.


Rounded Measuring Cup or Spoon

Do not flatten out the ingredient to the top of the measuring cup or spoon. Allow it to pile up above the rim into a soft, rounded shape.


Heaping, Heaped Measuring Cup or Spoon

Pile as much of the ingredient on top of the measuring cup or spoon as it can hold.


Firmly Packed Measuring Cup or Spoon

With a spoon, spatula, or your hand, tightly press the ingredient into the measuring cup or spoon. Measure as much of the ingredient as you can fit into the measuring cup or spoon.


Lightly Packed Measuring Cup or Spoon

Press the ingredient into the measuring cup or spoon lightly. Do not compress it too much or leave any air pockets.


Sifted

Sift with a sifter before measuring to ensure that the ingredient is not compacted and that there is no other foreign substance in it.
